This Coconut Mocktail is just the perfect balance of sweet and refreshing! Made with three simple ingredients, it’s the perfect tropical mocktail to drink all summer long!
My sister recently introduced me to the most incredible coconut mocktail! It’s made with only three simple ingredients, all of which I already had in my fridge. I’m seriously amazed by this drink, and planning to sip it all summer long by the pool.
A few wonderful things about this recipe that I want to point out:
- The Foam! When you stir the soda water with the coconut lime mixture, a really wonderful foam develops at the top of the drink. This makes it feel extra special, and more like a real cocktail!
- The Ratios! This recipe is easy to scale, because it’s a 1:1 ratio of the coconut drink mix and lime juice topped with soda water.
More than just a mocktail…
While this recipe is certainly a wonderful mocktail, you could also add a splash of your favorite cocktail! I’ve tried it with light rum, but I bet it would also be great with tequila, or vodka.
Ingredient Breakdown
Coconut Drink Mix
This Coconut Mocktail gets the sweet and creamy coconut flavor from a coconut drink mix. My preferred mix of choice is the Coco Reàl Cream of Coconut drink mix. I like this mix because it provides a nice coconut flavor that’s just the right amount of sweet. It also comes in a convenient squeeze bottle which makes it easy to store between uses. I find that most of my local grocery stores and target in my area carry it for around $5. I’ve also seen it at Total Wine & More.
Lime Juice
This recipe also calls for fresh lime juice. I’m normally not a fan of shelf-stable citrus juice as a substitute for freshly squeezed, but I have one brand that works here. It’s key lime juice from the brand Nellie and Joe’s For some reason, this lime juice from concentrate does not taste like other shelf-stable citrus juices. I keep a bottle on hand for use in salsas and drinks for when I don’t have limes.
Sparkling Water
You can use any soda water you prefer for this recipe. I use unflavored sparkling water from my soda stream, or Topo Chico. I think this recipe would also be great with La Croix or another flavored sparkling water. You could go for an obvious flavor choice like lime or coconut, or mix it up with a totally different flavor! I personally want to try it with tangerine, passion fruit, or mango to lean into that tropical fruity flavor!
Coconut Mocktail, Step by Step
Measure out ½ oz of Coco Reàl Cream of Coconut drink mix.
To the same measuring cup, add ½ oz fresh lime juice.
Stir the two well until all of the coconut drink mix has mixed into the lime juice and you have a creamy mixture. It’s really important to get all of the coconut drink mix stirred in before you add the sparkling water. If you don’t, you might end up with large chunks of the coconut mixture that remain undissolved.
Add the coconut lime mixture to a glass and top with ice.
Slowly pour in 5-6 oz of sparkling water.
Stir the mixture well. I like to concentrate my stirring on the bottom part of the glass where the coconut lime mixture is. As you stir, you should notice a nice foamy top forming on the drink. Continue stirring gently until the lime coconut mixture is all mixed in.
Garnish with a slice of lime and enjoy!

Coconut Mocktail
Ingredients
- ½ oz coconut drink mix
- ½ oz lime juice
- 6 oz soda water
- 1 slice of lime for garnish
Instructions
- Add coconut drink mix and lime juice into the same measuring cup and stir well. The mixture should be fully combined, and in color.
- Add coconut lime mixture to the serving glass.
- Fill glass with ice cubes.
- Slowly pour soda water into glass. Stop halfway and stir the coconut lime mixture with the water to combine.
- Continue pouring water, and stirring gently. If stirred enough, a foam should start to form on the top of the drink.
- Garnish with a sliced of lime.
